Apple Cupcakes for Teacher Appreciation Week

These apple cupcakes for Teacher Appreciation Week don’t actually have any apple in them at all. No, but they look like the reddest, rosiest apple for teacher apples that you could ever hope to find.

“Mommy, those look like APPLES!”

That’s what the Princess Cupcake said when she came downstairs for breakfast this morning and saw our “snack” for the class.

She was looking at these apple cupcakes that I made, at the very last minute mind you, for Teacher Appreciation Week. I wanted to make them a bit more “apply” but under the circumstances, I’m good.

We got home late Sunday night – the night I was going to plan our Teacher Appreciation treats – so…. I actually remembered we had snack Monday night as I was driving home so… these apple cupcakes were created under duress. I nearly waivered and grabbed some cheese sticks to go with the endless orchard of mini oranges we seem to have, but it’s our last ceremonial snack day for the year – and it’s Teacher Appreciation Week, and I thought we should show up a little.

I decided to go with the mini apple cupcakes because there are 5 – FIVE — birthday parties this month – and the buttercream frosting to healthy snack ratio was way out of whack already.  The teachers (and coaches and ballet teachers) all got regular size apple cupcakes though.

Apparently they were a hit because they made the top 3 proclamations, “Mommy, my friends loved the apple cupcakes today!” that the Princess Cupcake made on the way home.

If you need a fast treat to take to school this week for Teacher Appreciation, this is it.

You will need:

  • Mini cupcakes
  • Frosting
  • Red food coloring gel
  • Red sanding sugar
  • Mini pretzel sticks
  • Green gummy candy or fruit strips

Here’s what you do:

  1. Dye buttercream red with gel food colors.
  2. Frost cupcakes.
  3. Roll/dip apple cupcakes into red sanding sugar and cover the frosting completely. I put the sanding sugar in a small bowl that’s a little larger than the cupcake.
  4. Smush a small dent into the middle of the top of the cupcake with some sanding sugar on your finger or a fondant tool.
  5. Break a mini pretzel into a ½ inch piece and stick into the dent on the top of the apple cupcake.
  6. Cut two strips (per apple cupcake) of green gummy candy and put on top of cupcake to look like leaves.

I purchased a couple of clear containers to put an individual cupcakes in, cut out a red tag and wrote, “Thank you for teaching me ballet,” “Thank you for teaching me t-ball” and tied it to the top of the container. These would be even cuter if you could find some red and white checkered cupcake wrappers.

And there you have it. Easy Peasy Apple Cupcakes for Teacher Appreciation Week.
